As I climbed the stairs while feeling lost, I entered a clean and calm interior. The soup-based dan dan noodles have a beautiful balance of spiciness and the numbing sensation of Sichuan pepper, with a clear umami flavor. The thin noodles hold the soup well, and the pop-like texture is pleasant. The ingredients, such as the meat miso, bean sprouts, and scallions, are crisp, creating a good overall balance. There is also a hint of acidity typical of Xi'an style, allowing for an authentic taste experience. I was also intrigued by the set of saliva chicken, braised pork rice, and mapo tofu, and I felt warm from the attentive service.
