The hand-made soba made from locally produced Hitachi Aki buckwheat, ground with a stone mill, offers a subtle aroma and a firm texture. The dipping sauce made from kombu, shiitake mushrooms, and bonito flakes is rich and pairs perfectly with the soba. The 'Suzushiro Soba' enjoyed with crunchy radish has a refreshing texture that is irresistible. The tempura is made with freshly picked vegetables, highlighting their sweetness and crispiness. The signature dishes like Mori Ten Soba and Ten Zaru Soba are also substantial, allowing for a satisfying meal without getting tired of the flavors. Finishing with the rich soba broth enhances the flavor of the soba even more, leaving you feeling happy.
