The owner, Ryuji Momooka, trained as a sushi chef at a sushi kappo restaurant in Los Angeles, USA for about five years. With this experience, he opened "Ajinomise Iwashi" in Morioka City. The restaurant serves nigiri-zushi made with red vinegar and also operates as an izakaya (Japanese-style bar).
