The vegetable-rich tanmen is pleasantly infused with ginger, warming the body. A large bowl is heaped with cabbage, bean sprouts, and more, and the aroma of the stir-fried vegetables whets the appetite. The salty broth has a nostalgic flavor, and the medium-thick straight noodles are smooth and chewy, perfectly complementing each other. The thick chashu is tender and packed with flavor. The pleasantly fragrant cold noodles can be enjoyed on their own, and the sliminess of the okra is delightful; when paired with the dipping sauce, it adds a depth of flavor. The fried mackerel and fried chicken are also highly satisfying, and the ginger pork is moist, finished with a slightly sweet sauce.
