Matsuzushi

This long-established restaurant features sushi made with sushi rice using red vinegar and local fish. Nigiri are lightly pressed and are in perfect harmony with the ingredients. The restaurant offers unique menu items such as nigiri with shiitake mushrooms and grilled shiitake mushrooms, among others, and other sushi that make the most of seasonal local fish.

A restaurant where you can enjoy a meal in a relaxed atmosphere. The interior is decorated with the warmth of wood, and counter seats allow diners to closely observe the craftsmanship of the chefs. Families, couples, and even solo diners can feel free to visit the restaurant, and the friendly atmosphere is appealing.

After training at the main Ginza Sushi Ko restaurant, the restaurant is known for its traditional ginkgo counter and unchanged sushi rice formula. The red vinegared sushi rice inherited from his predecessor was an innovative experiment at the time, and is still popular today for its gentle taste. 2021 awarded a Michelin star.

He is the third generation master of Matsuzushi. After graduating from high school, he studied at a culinary school in Osaka, and then trained for five and a half years at the main Sushi Ko restaurant in Ginza. He then took over Matsuzushi in his hometown of Okayama, where he honed his skills through rigorous training. His experience at Sushi Ko, in particular, laid the foundation for his deep understanding of sushi and his skills.
