I visited a quiet shop in a back alley of Toride for the first time. The soba made from Shinshu Yatsugatake buckwheat, ground with a stone mill, has a beautiful color and a fragrant aroma. I ordered a mixed serving that allows you to enjoy both seiro and inaka soba, and it was interesting to compare them as they were served on separate zaru. The thin and crisp seiro stands out in sweetness with just a pinch of rock salt. The inaka soba has a rustic flavor and a firm texture, and when combined with tororo, it further enhances the smoothness. The shop operates on a first-come, first-served basis until sold out, so if you're lucky enough to get in, it makes for a very happy experience.
