At Tsukesoba Shirakami, we offer flavorful domestic 2:8 soba noodles, known for their smooth texture and deliciousness even on their own. The dipping sauce, made with a Japanese-style broth that pairs perfectly with the soba, is exquisite, and guests can enjoy dishes that utilize fresh local ingredients. The interior has a calm atmosphere, and there is also a tatami room equipped with a sunken kotatsu available for use.

In a calm interior with tatami rooms and a counter, the elderly staff warmly welcomed us. The 2:8 soba is said to be made with spring water from the Shirakami Mountains, and its smooth texture and pleasant aroma are impressive. The dipping sauce, rich with duck and horse meat, has a perfect balance of Japanese dashi and soy sauce, making it an excellent match with the noodles. The crispy shrimp tempura and sweet apple tempura were delightful, making it hard to put down the chopsticks. There is also a variety of dishes like dashi-maki tamago (rolled omelet) and tororo rice bowl, which is great because you can enjoy more than just soba. At the end, drinking the rich soba broth with the dipping sauce left a comforting aftertaste, and I was very satisfied.
