Regardless of gender, if an adult eats more than 20 plates or a child (elementary school student) eats more than 15 plates, we will present them with the 'Castle Plate Soba Certificate' as proof. Additionally, if a male eats 30 plates, a female eats 20 plates, or a child (elementary school student) eats 15 plates, their name will be permanently registered in the Castle Ranking. Furthermore, if you collect and bring 5 of those Plate Soba Certificates, you will receive the 'Castle Soba Enthusiast Certificate,' which grants you free soba for one year. You can take as many years as you need to collect the Plate Soba Certificates.
Kirin Ichiban Shibori
We have carefully selected local sake.
A Japanese sake with a gentle and clear flavor reminiscent of the scenery of Tajima's 'Castle in the Sky' in Izushi. The mouthfeel is mild, allowing you to appreciate the umami of the rice, while the aftertaste is refreshing. It does not interfere with the aroma of Izushi's soba noodles, making it recommended as a food pairing. Rakuraku Tsurugi is a sake from Kasumi Tsurugi that allows you to genuinely taste the umami of the rice. With a mild flavor that has no strong characteristics, it pairs well with soba noodles without overpowering their aroma.
Kasumitsuru Yamahai Style Refreshing Cold Sake, brewed by the long-established brewery in Tajima and Kasumi, 'Kasumitsuru'. This cold sake retains the umami and richness unique to the Yamahai method while maintaining a refreshing finish that does not feel heavy even when chilled. Upon tasting, you can feel the fullness of the rice, and it disappears cleanly, making it an excellent match for seafood dishes and Izushi Soba. By drinking it chilled, you can enjoy the balance of umami and refreshing sensation characteristic of Kasumitsuru.
