Hijiri Shuzou, located on a hill in Shibukawa City, Gunma Prefecture, has been dedicated to traditional and high-quality sake brewing since 1841. The authentic shochu "Hijiri Sake Mizu," crafted using the brewery's unique methods, is characterized by its ginjo aroma and deep flavor. The atmosphere of the store is reminiscent of a warehouse, and the shop is spacious and clean. The interior has a calm brightness, and the fresh sake is properly stored in the refrigerated cases. There are many varieties available for tasting, allowing you to enjoy recommendations for dry sake as well as limited editions. The water used in the brewing process is soft, and you can clearly taste the difference when you sip it. The authentic shochu made from sake lees has a fragrant ginjo aroma, and its mellow richness and sharpness are pleasant. The staff's explanations are thorough, and I was happy to receive a small sake cup.
