First, a clear broth made from sea bream is served, providing a gentle flavor that is comforting. When the foam wheat gluten is submerged in the broth, its texture changes to a fluffy one, making it interesting and delicious. The cold flat noodles are thin yet firm, soft, and easy to eat. The cold curry udon initially tastes sweet, but the spiciness gradually comes in later, and it goes down smoothly even with ice in it. The small dishes and salad use Italian vegetables and safflower, offering a homely taste to enjoy. With seasonal decorations and careful explanations, the meal is well-coordinated, providing great satisfaction.
