This store offers a variety of fermented foods from Kanazawa, all with a careful taste. The kabura-zushi features white turnips with pink amberjack in between, making for a beautiful presentation, and the sweetness of the koji pairs well with the saltiness of the amberjack. Its crisp texture makes it a perfect match for sake. There is also daikon-zushi, which allows you to enjoy its matured deliciousness. They also handle fugu (pufferfish) roe pickled in rice bran, which becomes even more delicious when thinly sliced and paired with lemon or vinegar. You can enjoy various dishes, including cucumbers pickled in leftover rice bran, ochazuke (rice in tea), and even arrangements with pasta and tamagoyaki (Japanese omelet), providing a satisfying experience.
