Yamaju

Founded in 1630, Yamaju is a long-established brewing specialty store that began in Wakayama. It is characterized by its use of only soybeans, barley, and salt to create seasonings that are said to be the roots of soy sauce, fermented and aged for over a year. These seasonings, which bring out the natural umami of the ingredients, can be used in sashimi, chilled tofu, and various dishes, providing a rich and flavorful dining experience.
