As I entered the restaurant, Okinawan music was playing, and I took my seat while feeling the tropical atmosphere. The first dishes that arrived were mimiga (pork ear) and mozuku (seaweed), which had a crunchy texture and a refreshing aroma of shikuwasa that paired perfectly. The signature dish, soki soba (pork rib noodles), featured chewy noodles and tender pork that melded beautifully in the soup, making it impossible to put down my chopsticks. When I soaked a bit of the soba soup into the jushi (Okinawan rice dish), the umami deepened significantly, bringing a smile to my face. The vegetable-rich soup curry allows you to choose the level of spiciness, which is delightful as I can enjoy it with my preferred kick. In the restaurant, where light shines on the Ryukyu glass, I thoroughly savored the taco rice and completely immersed myself in the Okinawan vibe.
