En un escondite de Seúl, disfrutamos de una verdadera "sinfonía gastronómica". Visité el restaurante francés de una estrella Michelin "Kang Minchul" en el distrito de Gangnam. El chef Kang Minchul, quien se trasladó a Francia a los 24 años, ha acumulado más de 10 años de experiencia en Estados Unidos, Hong Kong y Francia, perfeccionando su arte en los restaurantes de tres grandes maestros: Joël Robuchon, Alain Ducasse y Pierre Gagnaire. Su habilidad se reflejó en cada rincón del menú. El concepto de este lugar es "Cocina Sinfónica". El menú está estructurado en movimientos como "Primer Movimiento", "Segundo Movimiento", "Finale" y "Encore", ofreciendo una experiencia donde cada plato se apila como una melodía. La sala privada donde comimos tenía una decoración muy hermosa, creando un ambiente especial y tranquilo. Todos los platos tenían un alto nivel de perfección, y los puntos que más me impresionaron fueron los siguientes. El Primer Movimiento comenzó con un amuse-bouche, seguido de caviar, camarones de flor de durazno (bisque con aceite de hierbas), vieiras (remolacha) y langosta (vinagreta de mango), una introducción ligera y vibrante. Lo más interesante fue "Caviar Redefined". Se ofrecieron tres tipos de caviar: Kristal, Baerii y Osietre Gros Grain, permitiendo comparar las diferencias en tamaño, color y sabor, y me sorprendió cuán diferentes pueden ser las expresiones de un mismo caviar. Este plato refleja bien la filosofía del restaurante de "reinterpretar la tradición desde una perspectiva moderna". El Segundo Movimiento presentó pescado (caldo de champiñones y trufa), pechuga de pato y solomillo de carne de res coreana (sabayón de cítricos y tomate), llevando la experiencia a un desarrollo más profundo y robusto. Después del final con frijoles de vainilla, el encore incluyó canelé, profiteroles de café, gelatina de mandarina y hasta té y café, sin dejar ningún espacio vacío hasta el final. El servicio fue profesional, dejando la sensación de haber asistido a una gran actuación. Aunque es difícil conseguir una reserva, vale la pena. Este es un lugar que recomiendo de todo corazón para aniversarios o comidas especiales en Seúl.
