The ingredients include special meat miso, green onions, leeks, egg yolks, seaweed, garlic chips, wonton chips, and 'bonito fish powder' used by local soba shops in Kushiro to bring out the flavor of Taiwan mazesoba even more. Taiwanese mazesoba originated in Nagoya as a soupless ramen. The noodles were custom ordered from Takahashi Seimen, located on Minamiodori, a street familiar to everyone in Kushiro. The noodles were repeatedly tested to ensure they mix well with the ingredients, resulting in a chewy flat noodle that can only be enjoyed here.
