Sweet shrimp account for about 70% of the total catch in Hokkaido, and Yoichi Town boasts the third highest catch in the country. Yoichi sweet shrimp are highly prized for their strong sweetness and high quality, with most being shipped to Toyosu, making them quite rare. When you sprinkle salt on these Yoichi sweet shrimp and let them rest a bit, their sweetness intensifies and the texture becomes rich and sticky. Approximately 30 pieces are generously served, with a mound of 'Toro-taku' made from the finest bluefin tuna from 'Yama Ko', said to be the best in Japan, towering in the center. The sticky texture and sweetness of the Yoichi sweet shrimp paired with the Toro-taku from 'Yama Ko' create a perfect match that provides great satisfaction. Our bluefin tuna is sourced from 'Yama Ko', a tuna wholesaler said to be the best in Japan, located in Toyosu. They are a professional group of tuna experts featured in the media. Most Michelin-starred sushi restaurants across the country use 'Yama Ko' bluefin tuna, and we, as sushi lovers, are so fond of 'Yama Ko' bluefin tuna that we were able to introduce it through acquaintances at sushi restaurants. I don't think there are any seafood bowl shops using 'Yama Ko' bluefin tuna. This dish allows you to compare five types of aged bluefin tuna: 'Akami' (lean), 'Chutoro' (medium fatty), 'Otoro' (fatty), 'Aburi' (seared), and 'Toro Taku' (fatty tuna with pickled vegetables), which is irresistible for tuna lovers. Be sure to try the Toro Taku wrapped in seaweed! Recommended toppings include large scallops, extra salmon roe, and half shrimp… 2,750 yen

The Uni Toro Salmon Bowl was born from customer feedback. It features popular salmon sashimi and the highest quality uni selected by our exclusive buyers at Seiichiya, all in one bowl. The rich flavor of toro salmon is luxuriously topped with three types: raw, marinated, and seared. The toro salmon has a refined and rich taste that melts in your mouth. Marinating intensifies the flavor, significantly enhancing its deliciousness. The seared version offers a delightful aroma while being rich yet pleasantly light. Eating uni and salmon together creates a perfect blend of the mellow umami of salmon and the rich, sweet flavor of uni. We have finally added eel to the menu, which has received a lot of feedback from foreign tourists. Our Unaju features domestically sourced eel, with our proud sauce and carefully selected ingredients, including sansho pepper. The eel is fluffy, with a crispy skin, and we have experimented with plating it so that half is presented skin-side up, allowing you to enjoy the crispy texture. Eel is rich in vitamins and collagen, has a nice fat content while being low in calories, making it a delightful ingredient for women. Above all, the glossy special sauce over the grilled eel served on rice, known as 'Unaju', is exquisite. Recommended topping: additional eel.

If we are going to feature unagi rice on the menu, we wanted to combine it with our essential sea urchin, which is a pride of our restaurant. We have created a unagi rice box with a focus on quality. The rich and creamy sea urchin skin is crispy, while the tender unagi is surprisingly well-matched, making us wish we had offered it sooner. Initially, we recommend enjoying the unagi and sea urchin separately, and then mixing them together later. Eating them together will surely fill your mouth with happiness. Our beef toro flakes are made from beef processed in Tokachi Shimizu Town. This beef is raised based on the desire of 'Born Free', prioritizing healthy cattle rearing. The pastures that provide feed for the cattle are free from pesticides and minimize chemical fertilizers as much as possible. There is a commitment to the rearing process as well. Instead of cramming them into small barns, the cattle grow up happily, eating delicious water and grass, and playing around in spacious exercise areas, just as the name Shimizu Town suggests. Taking over 36 months to grow without stress or physical burdens results in delicious beef. The non-heated beef toro flakes, which are completely uncooked, pair perfectly with toro taku! Enjoy the rich flavor and depth, as well as the melt-in-your-mouth texture. We recommend serving it with white rice! Recommended toppings include sea urchin, large scallops, and sweet shrimp - half portion... 2,200 yen. This is a carefully opened, thick and fatty rare large-sized true hokke, caught in Shakotan from Yoichi, and prepared by hand. The flavor is maximized through thorough control of humidity, airflow, and temperature, resulting in the 'Yoichiya Special One-Night Dried Fish.' The 'hokke' caught near Yoichi is particularly large, thick, and has excellent fat content. This exquisite dish is made by opening the fresh 'true hokke' from the back and drying it overnight with only 'sea salt' and 'cold wind'! The skin of this opened hokke is also very delicious. The reason why Uni-ji started a sea urchin specialty shop in Yoichi Town was that no one knew about Yoichi sea urchin. However, Yoichi sea urchin has a high taste evaluation, and the summer sea urchin is traded at a high price in Hokkaido, mostly sent to the Kanto region, resulting in little local consumption and low recognition. Yoichi sea urchin is characterized by its refined sweetness and the lingering flavor of the sea, and Uni-ji believes that Yoichi sea urchin is delicious. We wanted as many customers as possible to taste it in our hometown of Yoichi. This is the best sea urchin bowl that we want everyone to try at least once. The bowl features two types of fresh sea urchin: purple sea urchin and bafun sea urchin, as well as two types of grilled sea urchin: purple sea urchin and bafun sea urchin, making a total of four types to compare. This is a menu exclusive to the Yoichi family store. Recommended toppings include large scallops, extra salmon roe, and half botam shrimp.
