Kimchi is a type of pickled vegetable, typically made with napa cabbage and seasoned with a spice mix called yangnyeom, representing Korean cuisine. In Korean, it means 'pickled vegetables' and is well-known in Japan, used either on its own or as a side dish or ingredient in stews.
It is often thought to be centered around rice, but in ancient Korea, traditionally, the regions where rice cultivation was practiced were limited to a small part of the southwest. The food culture has incorporated grains obtained from field crops, such as wheat, buckwheat, and corn, which was introduced from the New World in modern times, similar to chili peppers. Due to being surrounded by the sea, there is also a high consumption of seaweed and seafood, and the consumption of raw seafood is quite common.

It is said that this is a remnant of the time when royalty and yangban favored copper products that are prone to chemical changes to avoid assassination by poison, but there is also a view that it was simply made of metal as a mimicry of the West.
