The small shop located at the top of the slope exudes a warm atmosphere the moment you open the door. The barley tea and crisp daikon salad that were served first instantly blew away the heat. While nibbling on fried soba sticks and homemade pickles, the time spent waiting for the slowly fried tonkatsu was enjoyable. The low-temperature aged loin cutlet has a light batter, and when flavored with Himalayan rock salt or wasabi sauce, its sweetness becomes even more pronounced. The pork miso soup, finished with a drizzle of fragrant sesame oil, enhanced the richness of the fat and the sweetness of the vegetables. Watching the master’s meticulous work over the counter while listening to rakugo records was a very pleasant experience.
