Utilizing the characteristics of two types of yeast, it properly brings out the inherent umami of sake. The crisp aftertaste is also rich in flavor, making it a 'dry sake that you won't get tired of drinking' with further refinement.
'Kubota Senju' was born in 1985 when Kubota was first released, and it is truly the origin of Kubota. Observing the transition of the labor foundation of Japanese people living in the city from physical labor to intellectual labor, it aimed for a 'clean and dry' style. The sake brewing was fundamentally improved, achieving a clean and light dry taste that, at the time, was not aimed at the general public, while still providing a sense of smoothness. 35 years have passed since then. In line with the times, we have pursued an even 'crisper taste that pairs well with meals.' We have focused on low-temperature and high-precision fermentation processes, increasing the refreshing sensation with less off-flavors. Additionally, by maximizing the effectiveness of the koji, we maintained the clean and crisp light taste while also expanding the range of flavors.
This is a sweet potato shochu that maximally brings out the charm of 'black koji' and is particular about its 'making.' It uses 100% of the Kagoshima-grown sweet potato 'Ogon Sensho.' The original liquor, which is distilled slowly and carefully with more time and effort than usual (luxurious distillation with sweet potato and low flame), achieves a rich, creamy texture and a clear aftertaste.
The shochu first released in 1916 by the founder of Kirishima Distillery, Yoshisuke Enatsu, is made with black koji. The authentic sweet potato shochu 'Kurokirishima,' which inherits the roots of black koji brewing from the founding era, is characterized by its rich sweetness and crisp finish.
The fruity aroma of the base spirit created from the manufacturing techniques honed so far, combined with the use of 'Kansui Koji Shikomi' base spirit, results in a refreshing and clean flavor. Its delicate taste pairs well with any dish, making it perfect for a good time. This is the barley shochu that closely accompanies your daily life, 'Ichiban Fuda'.
Shochu made only from carefully selected barley, barley koji, and pure water. This shochu, made with 100% barley for both ingredients and koji, was the first attempt of its kind in Japan. By using reduced pressure distillation, the peculiarities of the shochu are suppressed, allowing the sweetness of the barley to be fully extracted.
