A signature dish that is a source of pride for us. This hot pot features a refined sweetness characteristic of Saikyo miso. Initially, it has a light flavor, but gradually transforms into a deep and rich taste. Additionally, you can enjoy customizing the flavor to your liking with four types of condiments. This dish highlights the richness of the offal and the sweetness of the vegetables.
Koisan is one of the few restaurants that can offer authentic Matsusaka beef offal. Please enjoy the rich and plump offal that you won't find anywhere else.
The base of the broth is made with 'Kyoto-style white miso', but the addition of mentaiko doubles the deliciousness!! It's a hot pot that mentaiko lovers can't resist. The finale is a risotto packed with the rich flavor of mentaiko!! It's rich and exquisite.
The soy sauce-based 'Original Motsunabe' with its fragrant garlic stimulates the appetite and becomes exceptionally delicious when topped with fried burdock. You can fully enjoy the soup infused with the flavors of the offal and vegetables all the way to the final soba noodles.
The 'Kyoto Gion Motsunabe' is characterized by a clear broth enjoyed with a light Japanese-style dashi and ponzu, served in a shabu-shabu style. The refined seasoning allows for a full appreciation of the rich flavors and depth of the offal. This hot pot can only be made with fresh offal.
