Akino

The signature dish, Ojiya soba, is made using Shinano No. 1 buckwheat flour, which is ground in-house with a stone mill, and incorporates a unique Niigata method that uses funori (a type of seaweed) as a binding agent. It is a superb dish that offers a fragrant aroma, a firm texture, and a smooth finish. It is creatively served with local Niigata's beloved sweet and savory sauce over pork cutlet in a dish called 'tare katsu don,' allowing for a delightful set meal experience.

The interior of the store is decorated with wood grain accents and white walls, creating a calm and sophisticated adult space. The attentive service is exceptional. Soft jazz plays in the background, and combined with the fragrant aroma of soba, it creates the perfect environment for a quiet afternoon or a leisurely lunch time.

"Akino" was established in 2009 in the Ninjō Yokocho of Niigata City. It has become a beloved presence among local residents and tourists, and in 2020, it relocated to the first floor of Daiapurasu Honmachi along Honmachi Street for better accessibility. The soba noodles are made using Shinano No. 1 from Nagano Prefecture, and they are ground in small batches daily using a stone mill, ensuring they are always served fresh.
