It's a small shop with only six counter seats, but once you step inside, you are enveloped in a calm atmosphere. The chef manages everything by himself, and it's pleasant how he smoothly progresses through the course while engaging in conversation. The dishes served are diverse, ranging from sashimi to grilled items and nigiri, each allowing you to directly appreciate the flavors of the ingredients. The Hermes plates and beautiful presentation are visually enjoyable, making you excited even before you start eating. The delicate preparation of each ingredient, such as anago (conger eel), nodoguro (blackthroat seaperch), and abalone, shines through, and I couldn't help but be impressed with every bite. In addition to the attentive service, the thoughtful amenities contribute to a high level of satisfaction throughout the entire experience.
