Unaju, a classic dish at Uojima, features homemade sweet sauce that enhances the deliciousness of the eel in a simple yet satisfying way. Grilled beef fillet steak (Bizen black beef) is a highly fragrant dish with a very tender texture that whets the appetite. The steak and vegetable salad are dressed with Uojima's special dressing. We use live skin flounder, quality mackerel, Okayama-grown glass shrimp, live eel, and onions sourced from Awaji Island. The onion varieties are Tarzan (June to March) and Shichihou (April to May), known for their sweetness and fruity flavor. Our beef tenderloin comes from Okayama-grown Bizen black cattle.
