In a calm space with only seven counter seats, the single slab of cypress spreads out before me, greatly uplifting my spirits. Traditional Edo-style sushi is presented one after another, and I couldn't help but be captivated. Seasonal ingredients like flounder, baby snapper, and red clam are all fresh, to the point where I can even sense their aroma. The vinegared rice, cooked a bit firm, has a pleasantly rich acidity that melts in my mouth and pairs perfectly with the toppings. The clear soup and tamago that came out midway conveyed the careful craftsmanship, allowing me to enjoy the experience without getting bored until the end. It was a very happy moment, enveloped in the warmth of wood while savoring the artisan skills.
