The carefully selected black Wagyu beef is sourced in chunks, and each piece is meticulously prepared to the optimal thickness and size while assessing the quality and condition of the meat and its cuts. The offal is also carefully processed in-house to maximize the inherent flavors of the ingredients. Furthermore, we are committed to enhancing the deliciousness of the meat with our seasoning, and we do not place sauces on the table. Instead, we suggest the best pairing for each cut from options such as marinade, miso sauce, seaweed salt, wasabi, egg yolk, and sukiyaki sauce. The cuts we offer may vary daily based on sourcing conditions, but we deliver the best dish of the day in its finest state.
Homemade napa cabbage kimchi, carefully marinated in a rich original sauce to bring out deep flavors and umami. The moderate spiciness and mellow taste enhance the pairing with grilled meat.
