Chef Yoshida, who honed his skills in Gion, showcases authentic Japanese cuisine in Kitashinchi, utilizing seafood and vegetables sourced directly from producers. Each dish artfully highlights seasonal ingredients such as akagai (red clam), hamo (pike eel), and snow crab, reflecting both high technical skill and a deep love for the ingredients.
