Hell boiled is one of the representative local dishes of Upper Goto. Boiled udon is served in a large pot at the dining table. Surrounded by the pot, diners scoop udon from the bubbling pot and dip it into their preferred dashi made with grilled flying fish, or mix it with raw egg to slurp. This is a simple and rustic way of eating unique to the authentic Upper Goto.
