As you descend underground, a calm space with just a counter unfolds, creating an exciting hideaway atmosphere. A young craftsman cheerfully engages with you, asking about your preferences and appetite while putting together the menu. The first dish, grilled mackerel sashimi, showcases the fine craftsmanship of the knife work, leaving a strong impression of its savory aroma and sweetness. The following nigiri, featuring the bursting fat of blackthroat seaperch and live sweet shrimp, is outstanding, with each piece evoking a sense of wonder. The rice is on the smaller side, balancing well with the toppings, and the refreshing umami of the striped jack and horse mackerel stands out, making it easy to eat. The comfort of being able to savor the flavors while discussing fish makes it easy to linger longer.
