The flow of the dishes is beautiful, and it is exciting from start to finish. The flavors evoke a sense of tradition while being creatively refined, and the umami of the dashi gently permeates the body. The grilled conger eel and the fragrant sweetfish dish allow you to enjoy the aroma as well. The abalone steak is cooked to perfection, and the flavor of the seaweed pairs perfectly with the liver sauce. The young bamboo shoot and clam soup, as well as the small pot of soft-shelled turtle and shark fin, are full of seasonal blessings. Even the final sweet course is carefully prepared, bringing happiness with white miso ice cream and anmitsu.
