Typically, Chicago pizza dough is baked for a long time, resulting in a firmer finish. Our dough is a completely original recipe that has been carefully crafted to ensure that each individual pizza can be enjoyed until the last bite, with a crispy exterior and a chewy interior. We blend several types of flour to achieve a perfect weight that is not too heavy even after eating a whole pizza. This dough is prepared every morning, with fine adjustments made according to the temperature and humidity.
The homemade tomato sauce is simmered slowly with a blend of several spices and tomatoes. The sauce is then allowed to rest overnight to mellow its 'edges'. After that, it is further reduced and mixed with another 'second tomato sauce' that has been aged in refrigeration for a long time, adding a deeper umami to the pizza. It may seem simple, but it is actually a complex sauce with a two-layer structure.
All the cheese used is cellulose-free. The mixed cheese is a blend of two types of cheese, and it is adjusted to ensure that the stretch and flavor when melted balance well with the sauce from Pisa. The cheddar cheese is sourced from the authentic US.
In an American-style space, we offer craft beers from both domestic and international sources, as well as our special homemade lemonade and homemade berry cola, which enhance the flavors of the pizza. Please find the best combination to enjoy.

A classic Tennessee whiskey characterized by the sweetness of banana and caramel, with a rich body. The owner recommends an American highball mixed with strong soda. It pairs perfectly with all pizzas, enhancing the rich flavor of the cheese. Let's start with a toast using the American highball.
A premium bourbon born in Kentucky. It uses 'winter wheat' instead of rye as an ingredient, resulting in a very smooth mouthfeel. It has sweet aromas of vanilla and caramel, with a hint of oak. Not too strong in character, making it a recommended choice for bourbon beginners. It can be enjoyed on the rocks, as a highball, or straight.
Characterized by a sweetness reminiscent of vanilla ice cream drizzled with maple syrup. The typical bourbon aromas of solvents and leather are subtle, replaced by floral and fruity notes that linger in the aftertaste. The recommended way to enjoy it is as a highball. Mixing it with soda enhances the corn-derived grain sweetness. While it has few quirks, the richness of flavor can be savored until the end.
Sweet vanilla aroma with caramel and a roasted flavor like brown sugar. The mouthfeel is very smooth, followed by the scent of the barrel after the sweetness of vanilla and brown sugar, with a rich chocolate-like finish. The recommended pizza to pair with it is the Mud Mash, which spreads the umami and roasted flavor of mushrooms. Enjoy it on the rocks or straight with smoked maple nuts for a slow and delightful experience.
An American whiskey with a personality that changes like a roller coaster, featuring fruit, spice, and barrel notes. It has a dark fruit flavor from the barrel, with hints of clove and cinnamon. The finish leaves a touch of oak and mild astringency. Perfect for those who want to engage with the whiskey itself. Enjoy the depth of American whiskey leisurely with smoked maple nuts and olives.
The world's first whiskey made exclusively from millet, produced in Chicago, USA. Upon tasting, the sweetness of maple syrup, oak, and nuances of sugar-coated dried fruits unfold, leaving a fruity finish and a pleasant barrel aftertaste. A sophisticated and robust whiskey, perfect for those who enjoy a stronger spirit. Best served on the rocks or straight.
Craft gin made in Hiroshima at the Sakurao Distillery, centered around Japanese citrus and herbs. The owner, being a Carp fan, added this to the lineup! It is neither too bitter nor too sour, with a perfect balance of refreshing taste and mild bitterness. There are many ways to enjoy it, but the owner's recommendation is to mix it with soda. When combined with carbonation, the citrus aroma becomes more pronounced, and the subtle bitterness spreads pleasantly. It is a high-quality domestic gin suitable for pairing with food.
A dry gin produced by Bruichladdich Distillery on the Isle of Islay, Scotland. This gin uses 22 types of botanicals sourced from the island. The flavor features a refreshing burst of juniper berries and citrus, reminiscent of forests, herbs, and mint. It has a subtle sweetness, with a quiet finish of spices and peels. Recommended served on the rocks or straight. It is a high-quality gin that you should enjoy without excessive dilution, allowing the contours of the botanicals and the gin itself to shine.
Craft gin produced by the distillery KOVAL, which was established in Chicago after the repeal of Prohibition. It uses a variety of organic ingredients, including major ones like juniper berries, as well as rose hips, cinnamon, fennel, and lemongrass. This premium gin is characterized by its clear taste with distinct outlines of the ingredients. It pairs exceptionally well with our pizza when mixed with soda! The rich flavors from the pizza are reset with each sip, allowing you to enjoy the pizza deliciously from start to finish.
