The new counter is bright, and the tatami material smartphone holder makes it comfortable. It's exciting to watch the chef's knife skills right in front of you. The appetizers, such as chawanmushi with namerou and flat shell clams with miso, are all crafted with care, making me happy from the start. The sushi has a perfect balance of rice and topping, and the temperature is just right, leaving me impressed with each piece. The creamy ankimo and the surprisingly mild shark heart were particularly memorable. Even the final dish of white shrimp and sea urchin rolled in yam was flawless, and I left very satisfied.
