Café Mori no Hibiki

Our most popular menu item. This is our pride and joy, an original cheesecake that took over 3 years to perfect. We went through numerous trials to achieve a smooth texture. By blending three types of cheese, we created a rich cheesecake that never gets boring. We adjusted the oven temperature three times during baking to slowly develop the texture. As a result, it is a baked cheesecake, but it does not have a browned surface. We added the crunchy texture of roasted walnuts as an accent. Smooth and rich, our most popular dessert, Homemade Cheesecake - 600 yen (tax included)

Sourced specially from a shop in Sendai. We have included it in the menu with the desire to introduce it to everyone, even at the cost of shipping. These very elegant cookies come in a combination of three different textures. The crunchiness is truly remarkable. Each cookie creates a distinct texture, and we are enamored with their wonderful quality. We hope you enjoy the differences in the three textures of these refined cookies sourced from faraway Sendai. 525 yen (tax included)

Perfectly pairs with coffee! This is a chewy baked treat!! The unique chewy texture cannot be found elsewhere. It is fragrant with cinnamon and rosemary, and uses the high-quality ingredient 'pine nuts'. The secret to its popularity lies in the fact that 'the appearance and taste are different'. It combines ingredients from 'Japanese, Western, and Chinese' cuisines that are usually not used together in a delicate balance. When you taste it, you will be like 'Huh!?' Of course, this is an original recipe, so you can only enjoy it here. Chewy new texture Pine Nut Torte (3 pieces) 470 yen (tax included)

Light and fluffy chiffon cakes are everywhere. However, they are 'too light' for coffee. Therefore, we developed a 'heavier chiffon cake' to pair with coffee. This is what happens when Mori no Hibiki makes a chiffon cake. The aroma of spices marries with coffee. It's a mysterious chiffon cake that combines fluffiness and chewiness. Even though we say 'spice', it is not spicy. This is a spice chiffon cake made with a recipe that is completely different from the usual method, designed to pair well with coffee. 540 yen (tax included)

Enjoy the crispy and hot dessert, the only warm sweet at Mori no Hibiki. When an order is placed, a 'sweet aroma' spreads throughout the store. You might think of traditional Japanese sweets when you hear 'anko' (sweet red bean paste), but the cream cheese does a great job. The tanginess of the cream cheese and the sweetness of the anko are a perfect match! Combined with the butter of the pie, it creates a Western-style dessert experience. Please enjoy it topped with almonds and maple syrup. Freshly baked crispy Ogura & Cream Cheese Pie for 600 yen (tax included).
