Domestic mackerel, rich in fat, is marinated for a long time in a special seasoning liquid and grilled over high heat to a fragrant finish, then combined with sushi rice made from Omi rice 'Nihonbare'. The crispy texture of the sweet vinegar ginger sandwiched in the middle of the rice and the refreshing aroma of shiso enhance the umami of the mackerel.
We seasoned domestically sourced mackerel with just the right amount of salt and finished it with our special vinegared dressing. It is paired with sushi rice made from Omi rice 'Nihonbare'. The crispy texture of the sweet pickled ginger sandwiched in the center of the rice, along with the refreshing aroma of shiso leaves, enhances the umami of the mackerel.
We carefully select particularly large mackerel from the large, fatty mackerel caught from autumn to winter, marinate it in a special seasoning liquid for a long time, and grill it to perfection while keeping the umami intact and ensuring it is moist and tender. Enjoy the exquisite balance of the mellow sushi rice made with Omi rice 'Nihonbare' and the fragrant grilled mackerel.
