The atmosphere allows for a quiet time, making it easy to drink calmly. The liver marinated in oil is tender, and the light richness of the oil combines to create a very delicious dish. The cartilage and negima are grilled to perfection, with an irresistible aroma. The stew has a smooth texture, allowing the umami of the ingredients to be felt gradually. The white meat has a juicy fat that spreads, leaving a pleasant aftertaste. The shochu has a lemon fragrance that makes it easy to drink, and it pairs excellently with the food.
