Our signature menu item, hormone, is made from fresh ingredients that undergo special preparation to remove the unique odor of hormone, and is lightly seasoned. First, lightly grill it, and when the hormone starts to curl, enjoy it as is. After that, according to your preference, you can add garlic or chili and dip it in our special sauce before enjoying.
Kashira meat is the meat from the head of a pig. The flavor and tenderness vary depending on the part, such as the cheek or neck area, but we strive to provide the most tender cuts possible. It has an excellent balance of fat and lean meat, making it very juicy. It can be enjoyed with salt flavor or our special sauce, but we recommend the sauce flavor with rice.
We serve only the lower part of the tongue, known as the back meat, skewered from the Kashira meat. It is very juicy and delicious, but the amount that can be obtained in a day is limited, making it a limited item.
This is pork tongue. At our restaurant, we serve it cut thick to allow you to enjoy the original flavor and juiciness of the pork tongue. The standard flavor is salt, but I think you will also enjoy a different taste if you occasionally try the sauce flavor.
This is pork heart. It has a milder flavor compared to other meats, is not tough, and has a nice texture that can be enjoyed. It can be enjoyed with either salt or sauce, but please try Hatsu with salt once with beer.
We serve it thickly cut in a completely fresh state with no odor. It has a sweetness and is very delicious meat. If you have the chance, please give it a try. You might change your perception of liver? *Please cook it before eating.
Like beef liver, it is rare and will be trimmed before serving, so the quantity is limited. The taste is mild and resembles tuna sashimi. Please try it with a special sauce that includes ginger. *Can be eaten as sashimi.
This is a light pickled napa cabbage arranged with salt kombu and special nanban sauce.
The garlic sprouts that were well received have been discontinued. For the time being, we will only be offering cabbage, but we are exploring new vegetables.
We use domestically produced rice. This is delicious rice cooked fluffy in a gas pot.
This is a simple miso soup made with tofu and fried tofu. Please enjoy it with rice.
One cup 500 yen, four cup bottle 1,800 yen, one sho 4,500 yen. Shochu can be mixed with green tea, water, hot water, or Hoppy. For all mixes except Hoppy, please adjust the amount yourself.
Can be served hot. There is also a two-cup tokkuri.
Hoppy mix is equivalent to two mugs for one bottle against shochu.
We serve Suntory Kakuhai Highball in a small mug.
Oolong tea is served in a small mug. If it is mixed with shochu, it will be served in a special pot.
