Kim Ramen

The soup of Kimura Ramen, rich in pork back fat, is a pork bone soup that is slowly cooked with plenty of pork bones in a special large pot. The rich soup, condensed with umami, is seasoned with a special sauce (soy sauce, miso, salt) and topped with melty pork back fat. It is rich but not heavy, with a gentle flavor.
