Gambia is a small country surrounded by Senegal, with territory only along the Gambia River. It has an area similar to Akita Prefecture and a population of approximately 2.28 million. Gambia has an ethnic composition similar to that of Senegal, with groups such as the Mandinka, Wolof, and Fula residing there. The cuisine in Gambia often shares similarities with the broader West African cuisine. There are two main styles of cooking: one is 'staple 1 + stew 1' (in the language of Gambia's main ethnic groups, it is called Sussu). The second style of cooking is 'one-pot dishes' (like pilaf).
In Gambia, rice is commonly eaten. White rice is called Nyankatan in Wolof and Nyankatang in Mandinka. It is also mixed with peanuts. Additionally, the type of dish where cooked rice is served with a thick or sticky stew, known as 'bukkake meshi', is similar to other countries in West Africa. Furthermore, Benachin (Wolof; in Mandinka, it is called Benachin) means 'one pot dish', referring to a rice dish cooked with fish or meat. Benachin is known as Cheb in Senegal, Jollof rice in English-speaking countries, and Riz Gras in French-speaking countries. It is a colorful dish often prepared for celebrations. Staple foods made from root vegetables include fufu, a dough-like food made from cassava or yam.
