A luxurious clear soup made by extracting umami by slowly simmering chicken bones at low temperature for 14 hours, using plenty of scallops and dried scallops.
Three types of noodles (white soup, clear soup, dipping noodles) with carefully selected domestic wheat, adjusting the blend, water content, etc. to match the homemade noodle soup. Dipping noodles are made with 100% Kyoto wheat.
Pork shoulder loin is vacuum-cooked for 2 days to season thoroughly, then cooked at low temperature, left overnight, and finished with a smoked flavor to create our proud rare chashu.
