The main ingredients of this kaiseki cuisine are high-quality seasonal vegetables, wild plants, and picked herbs produced by the fertile land, pure water, and clean air of Iiyama in Kita-Shinshu.
We use natural ducks, not ducks raised for food. The duck hot pot has a golden broth that is carefully prepared over a long period of time. You can enjoy a lot of local brand vegetables such as the tender Matsumoto leeks. Depending on the duck, you can also taste rare parts such as liver, gizzards, and hearts. Duck meat contains high amounts of high-quality unsaturated fatty acids, heme iron, and B vitamins, and is called "the source of youth" and "beauty vitamin," making it a very pleasant food for mature women.
The owner himself visits processing plants in the city and selects only the best quality Shinshu gibier. The botan nabe, with its delicious meat that becomes more tender the more it is stewed, has many regular customers who come back several times during the winter.
