The flagship cheese Mondor cheese is a limited edition cheese from October to March. It is a washed rind type but mild and delicious! It is also delicious as a baked Mondor! If you ask the master, you can have it baked on a baguette.
This prosciutto salad uses Spanish Iberico Bellota aged for 48 months. The ham is made from pigs that have been fed acorns and raised up to 150kg, resulting in the finest prosciutto.

We use black Wagyu beef from Kagoshima prefecture, and furthermore, we use virgin cows that have not given birth! We grill a thick sirloin steak, 2.5 centimeters thick, on a 3cm steak iron plate! It is served in approximately 200 grams.
