Each sweet potato from Oita Prefecture, 'Beniharuka', is carefully washed, steamed with the skin on in a steam kettle, then further baked in a pot to bring out the sweetness. A special sweet bean paste made with butter and egg yolks is wrapped in a separate dough, placed in a mold, and baked slowly to create a 'realistic and more delicious sweet potato dessert'.
A rich pudding made with Jersey milk from Aso Koguni, accented with a slightly bitter caramel sauce. Sandwiched with custard cream in a fluffy pancake-like dorayaki skin.

The 'Bondia', characterized by the fragrant flavor of butter, the texture of walnuts, and a rich taste that is not too sweet, was created in 1978 to commemorate the sister city relationship between the city of Aviero in Portugal and Oita. 'Bondia' is a Portuguese word that means 'good morning' or 'have a nice day'.
