Among the free-range chickens, Ooyama chicken is relatively tender and suited for Japanese tastes. We have named our version of chicken nanban after our restaurant, calling it Chicken Nanban (Van)!! The soy sauce-based sauce and garlic mayonnaise create a perfect harmony.
