This course is a safe and affordable course that uses pesticide-free vegetables from contract farmers and natural eggs from heirloom farms for dishes and desserts.
The most natural course in our restaurant, composed from Rubino's recommended a la carte menu. You can enjoy a lot of vegetables, seafood, standard appetizers, and seasonal ingredients, and this course is the most chosen course by our regular customers and others.
The chef has carefully selected the best ingredients and only the freshest and most in-season items from the market. This full course is not suitable for those who have a lot of allergies, pregnant women, or those who cannot eat raw food. This is a special course for those who have made a reservation for this course, which incorporates not only Italian cuisine, but also other techniques such as Japanese and French cuisine.

1,320 yen - Mr. Tatsumi from Tatsumi Distillery has traveled to over 700 breweries in 30 countries, learning various methods of alcohol production. He arrived at Gujo Hachiman, which resembles the landscapes of the Swiss mountains, known as a holy place for absinthe and selected as one of Japan's 100 famous waters. There, he distills craft gin and absinthe. Available botanicals can be enjoyed straight, on the rocks, with soda, or tonic.
1,320 yen - This is a craft gin made using Nanno mikan, a specialty product from Kaizu City, Nanno Town. It uses as many mikan as possible to bring out the aroma of the fruit. Enjoy it mixed with tonic or straight.
Our wines are rare natural wines made by producers who are closely aligned with nature. Some items may change quickly, so the menu will be at our discretion.
