The glossy cooked rice has strong umami, aroma, and sweetness, with a chewy texture that allows you to directly experience the original deliciousness of rice.
The founder discovered this in the climate of Ehime and used Ichimai bacteria cultivated from pure strains. The red vinegar is made only from sake lees that have been aged for ten years. Its sharp acidity and deep richness create a harmony with the rice.

Even those who cannot drink alcohol will be very satisfied! A pairing of dishes and broth! The content changes every month, so there is a new enjoyment each time you come. Example: Oyster mini bowl & special broth seasoned with buttermilk, salt salmon roe & special broth with bonito and green laver.
For those who want to have a little snack late at night or enjoy a second stop, we have prepared a selection of various dishes and nigiri that you can choose from little by little.
We always have about 15 to 20 types of various Japanese sakes available, including seasonal and limited editions, as well as popular sakes that come with a premium. The selection is updated daily to match the sushi ingredients, except for some fixed items.
The taste of sake is greatly influenced by the choice of utensils. The glasses are carefully selected, primarily from the renowned wine glass manufacturer, RIEDEL. The ceramics are sourced from the famous Mino ware region. Additionally, we use the prestigious brand 'Nosaku' for tin sake utensils. These sake utensils not only enhance the flavor but also add a touch of color to the table.
Staff recommendations are good, but I want to try pairing my favorite sake with sushi! Such requests are very welcome. We especially want sake lovers to enjoy, so we will respond to procurement requests as much as possible. Please feel free to consult with us!
