The calm interior with only a counter was very pleasant with the color of the chestnut wood. The sushi prepared right in front of me by the chef had slightly smaller rice balls, and the balance with the toppings was outstanding. The first dish served, a selection of eight delicacies, was beautifully arranged with ingredients such as seaweed, vegetables, and shellfish sourced from all over the country, which was exciting. The original hand rolls featured layers of egg, salmon roe, and sea urchin, with textures and flavors that burst in one bite. Between the nigiri, fried and grilled dishes appeared, creating a dynamic flow to the course that kept it interesting. I was able to enjoy beer and sake at my preferred timing, allowing me to savor the story of the meal until the end.
