A long-established restaurant where you can savor exquisite soba from Akita

Kakunodate Soba is a place where you can enjoy authentic soba in a charming and clean setting in the Akita inland area. The finely cut soba, with its rich aroma and flavor, fills your mouth and is crafted to maximize the umami through the aging of fresh soba. In addition to soba, the popular sweetfish tempura is also highly recommended, pairing perfectly with beer. This renowned establishment is a must-visit for soba lovers, offering traditional soba made from carefully selected ingredients from Akita.

4.1

The exterior has a Japanese atmosphere that creates a calming feeling. The morisoba has a firm texture, a shiny surface, and a pleasant aroma. There are slight variations in thickness, allowing you to enjoy changes in texture with each bite. The dipping sauce is refreshing, with a strong umami flavor from the dashi, and the saltiness is moderate. The soba broth is also delicious, allowing for a pleasant taste experience until the end. The menu is easy to understand, featuring morisoba, oroshisoba, and kamo-zaru, and the service is polite.
