Talking with the staff at the counter is also enjoyable. The chilled beer is delightful, and my mood lifts from the very first glass. The sashimi is all very fresh, and the soft texture and natural sweetness of the red snapper are particularly impressive. The squid marinated in its own guts has a rich flavor that fills the mouth. There are also many dishes from Hokkaido, and the plate of jingisukan (grilled mutton) is delicious with both the meat and vegetables, making it hard to put down my chopsticks. The wasabi chazuke (rice with wasabi and tea) at the end is fragrant with freshly grated mountain wasabi and brings a sense of calm.
