The local chef, who is well versed in the seafood of Toyama Bay, offers a five- to six-course menu of the day's recommended dishes. Using seasonal ingredients and fresh seafood caught in the morning from fixed nets, all dishes are left to the chef. What will be served depends on the sea that day. The menu consists of dishes that allow you to enjoy the unique flavors and encounters that only Toyama can offer.

Romania: Pinot Noir. You may not be familiar with Romanian wine, but this is a recommended bottle of Pinot Noir! 'Le Vie (Domeniile Sahateni)'... The vineyard (in the Dealu Mare region of Muntenia) is located on the southern slopes of the Carpathian Mountains, at the same latitude as the French Côtes du Rhône region and with a climate similar to that of the French Burgundy region, characterized by little rain and significant temperature differences between morning and evening. This area is known for the high quality of its grapes.
Spain: Albariño. Albariño is a white grape variety originating from the Rías Baixas region in the northwest of Spain, known for its coastal landscape. It is a noble variety that represents Spanish white wine. Due to its proximity to the sea and its excellent pairing with seafood, it is referred to as 'the wine of the sea.' Enjoy the fresh and refreshing acidity and mineral feel nurtured by the cool sea breeze.

Opus One 2017 is a red wine with a rich personality, characterized by strong aromas of dark fruits, layered with complex nuances reminiscent of rose stems and earth. On the palate, it offers a smooth and rounded flavor that leads to a long finish with balanced acidity and a silky texture. Notes of cassis, black cherry, and a hint of cocoa can also be detected, with velvety tannins elegantly tying everything together. It has high aging potential, allowing for enjoyment of its deepening flavors over time. Grape varieties: Cabernet Sauvignon 80%, Petit Verdot 9%, Cabernet Franc 5%, Merlot 5%, Malbec 1%.
