◇At our restaurant, all cooking processes are done using 'firewood'. By grilling with firewood that contains moisture, we can trap the umami without losing excess moisture from the ingredients, allowing you to enjoy them plump and juicy.
Creating charcoal from firewood and adding more firewood to the charcoal to create the perfect 'fire' for cooking with wood is not easy. The reason for this dedication is that we want our customers who come to 'Oshima' to experience a special deliciousness that cannot be tasted at home. Please forget the fatigue of everyday life and enjoy the deliciousness of wood-fired cooking with all your senses.
At the end of all courses, we serve our original 'Oshima Coffee', which is made from beans sourced from Oshima Coffee in Tottori and roasted in-house. Please relax and enjoy the aroma until the very end.

We blended three types of green plums, ripened on the tree at Hirooka Farm, with herbs to bring out their characteristics in this plum wine. We used multiple sugars, including natural sweeteners like maguey syrup, brown sugar, and Tochigi honey, to enhance the sweetness. This is a high-end plum liqueur that adheres to wine-making methods and is health-conscious.
This is a straight type plum drink made with 20% fruit juice, which has been aged to achieve a delicate aroma and flavor, with a refreshing and restrained sweetness using wine-making methods.
