The Hakata specialty grilled ramen is now available! The noodles, boiled al dente, are thoroughly grilled on a hot plate and then cooked in a Chinese wok in the Hakata style. We have finally been able to respond to the requests of customers who visited our main store in Hakata from Aomori.
This is a flavor that has been cultivated over three generations for more than 50 years. We have worked hard to ensure that the richness does not overwhelm the taste, allowing the umami of the pork bones to be fully conveyed in the soup. In Hakata, ramen is referred to as a meal on the go, and while the amount of noodles is not large, a lot of effort goes into the soup.
This is the 'Torotoro Chashu Ramen' that became famous after being featured in a magazine from Kyushu. The pork belly is simmered in several stages until it is reduced by about half, resulting in a slightly rich-flavored chashu with thoroughly rendered fat. Just before serving, it is seared with a burner to enhance its aroma, stimulating the appetite.
The usual tonkotsu soup has been made even richer and thicker in flavor, enhanced with spices and pork back fat for added depth.
Based on a pork bone soup, it uses blended miso and several types of spices, featuring thick noodles (160g) and plenty of vegetables, providing a satisfying taste and volume for customers. It is a popular winter menu item.
